Looking for CPU/GPU Upgrade Advice for 1080P Gaming and Triple Screen Sim Racing

I want to upgrade for better gaming performance with the falling price of CPU and GPU lately.
Currently running ryzen 5 3600 + 6600xt.
Would I benefit more from upgrading CPU to 5800X3D / 5800X or GPU to 6950XT? Would there be any bottle neck if I only upgrade one and keep the other part already in my PC?

Any other upgrade suggestions are welcomed.

Other parts include 650W Gold PSU and B550M mobo, 2x 8GB 3200mhz ram, would the PSU or RAM need upgrading as well?

It is basically 99% gaming PC, very light photo and video editing (by light I mean basic touch up and edit, nothing professional)
I play COD WZ/MW2, BF V, Squad (single 1080P) but mainly sim racing games (AC, ACC, AMS2, RF2 in triple screen setup 5760x1080P).

Thanks in advance for any advice and comments.

For triple screen, GPU a better upgrade …

For pure 1080p gaming, CPU upgrade to 5800X3D a better upgrade …

I used to run 3x 27" for a few racing games - RaceRoom, Iracing and PC2. For the money you're about to spend, also consider VR. Nothing can beat it for immersion and depth perception is so much more improved with it. However, monitors are better for a long session as VR does become tiring with the unit sitting on your face.

    • I thought about VR too but I'd likely get motion sickness after awhile.

      • Motion sickness really kicks in if you're say playing a FPS shooter, not so much for racing.

In many cases, the body adjusts after a few sessions.
