I just bought an iPad and I currently have a mobile plan with Vodafone using a physical Sim. Can I install an eSim on my iPad and still use the physical SIM on my phone? I just realized this might be a problem because new plans cost $15 a month and I have so much data on my mobile plan.

No. Vodafone will cancel the physical sim when they create the esim.
What you need is data sharing across the two devices with different SIM cards.
