Yeah, Sullivans Cove winning World's Best Single Malt Whisky in 2019 helped push the industry massively. Now there's distilleries popping up left and right making gin and ageing whisky, and a heap of them have hit the maturation point recently to be able to start selling as whisky
Yes I think Tassie is somewhere between 70-80 distilleries at the moment.

can’t figure out why australian whisky is so expensive ….glenfiddich 12 year old is is $65 , lots of scotches that are 10 year old for under $65, australian whisky is only aged 2-3 years , and distilling is an industrial process, not like a vineyard subject to weather and location. really should be cheaper than imported whisky as less logistics and hasn’t been aged as long.

Except that luxury goods like this, are priced at what the market will bear. There's no reason for them to lower the price if it's selling ok - the sale price is not dependent on the cost of production.
very true … and some people love to collect which drives the price of certain things up …i’ve seen some of the gin makers release whisky , amazing how distilleries can pivot from making gin before covid to hand sanitizer during covid as it was more profitable and then to whisky as the domestic gin market is flooded.
buy starward two fold when on special as it compares well to imported options at same price point …
