Bakers Flour Not Available Costco (Marsden Park)

We have had excellent results making bread using a breadmaker. But now we can't find Bread flour at Costco which used to be about $12 for 12 kg. Can any home Baker's tell me where they source their bread making flour from. I realise prices have increased but most places seem to be $20 or more a kg. $20 or more for 12 kg.

Any advice will be greatly appreciated. Thanks.

Google "gem of the west bakers flour"

    • That's what a lot of pizza places and bakeries use.

  • " $20 or more a kg " ?

  • Sorry should have said $20 for 12 kg. Thank you

  • Usually Laucke Wallaby Bakers flour in 5kg from the supermarket. Currently $10 at Coles. Otherwise if you know someone who is a baker they can order the whole Laucke range in 20kg bags. Alternatively Amazon has Gem of the West 12.5kg for $22.

    • "About this item:
-Vigorous strong strapping robust muscular substantial sound"

      Fantastic, good to know.

Op, I just look around at random grocers and see what they have. I used to get the Manildra stuff, but my grocer now has Ben Furney flour mills stuff, $15 for 12.5kg bakers flour, tastes fine to me.

  • Following as there was no stock at my local Costco either. Bought Wallaby Bakers flour in the interim but thinking of asking my local bakery if they can source some for me. I make sourdough bread and only for our own needs so not in competition with them so perhaps they may help?

  • I buy my own gluten and mix my own with plain flour.
This way I don't have to keep kilograms of baking flour (which can really only be used for bread), and i can use the plain flour for other things.

The difference between bread flour and all purpose flour is the protein level. All purpose flour in Woolies or Coles is usually 9-10% protein while bread flour can range from 11-13%. You can create this by adding vital wheat gluten to your flour. There is a formula online which helps you calculate how much gluten you need for every 1% increase in protein per gram of flour needed.

There is this Youtuber called Chainbaker. He teaches the principles of baking and how to calculate the required gluten to make bread flour.

You can source any flour to create bread flour when required and also use the AP flour for like pancakes or other food. You dont need to keep tons of bread flour at home. And also you have more granular control over the protein level as certain types of bread require different protein level. You put more protein if you like denser type of bread. Less protein if you prefer japanese style fluffy light bread.

  • That's very interesting. Now I need to source vital wheat gluten. Thanks!

    • How did you go with this? I was just looking to buy bakers flour from Costco but they only have 25kg bags.

  • I am in the same predicament, except rather than shopping at Costco, I've bought it from tasteful delights eBay for about the same price but with $12.95 shipping. That's now gone up to $19.95.

    I've found a website https://ibake.com.au
They are in Schofields, Sydney and offer free pickup or it seems like a flat $15 postage for one or more items.

EDIT: They do bakers, wholewheat, bakers meal…. but not pizza I am afraid.
The reviews for "Manildra STRONG Bakers Flour 12.5kg" mention great results for Pizza/foccacias
