U r travelling during the most busy week of the year so there is no such thing as cheap flights. U would be lucky to get a seat if u dont book early.

I totally agree with what Stevo said

sale period tickets to hk are mainly after 10th-mid jan which is out of your dates (they normally sell these in late nov/ early dec)

I live in Sydney and flights to HK are always booked out for xmas and always pricey, hence I avoid going in xmas whenever I can

prices will only increase the longer you wait

    Check out Cathay Pacific: http://www.cathaypacific.com/cpa/en_AU/homepage
There's a 'sale' on at the moment 'Hong Kong on sale! Fly from only A$819' book by 31Aug. However, $819 is only from Perth, and only during low season. High season (you) and from Sydney/Melb will be more. I fly to HK at least once a year, I always buy tickets directly through their website, cut out the middle man, good price, no booking fee, no credit card fee…, they also have 'packages' too, ie including hotel.
Yes, Cathay is probably slightly more expensive than Qantas, but Cathay has far better services and food. You can still earn Qantas Frequent Flyer points on Cathay flights.
You can also check out Malaysian Airline, the catch is stopover in KL, but stopover at a busy international airport days before Xmas is probably not a good start to a holiday.
What ever you do… as Austin316 said … BOOK NOW!
