  • Will be difficult having a toss with those handles

    • I guess that's why they are on clearance.

    • Also I think these are heavy compared to the ones at Asian grocery stores. Will be decent work out cooking friend rice with this.

    A good price for a debuyer one, but we just use the ones that are at most Asian grocery stores that are much cheaper and have better handles.

            @dcep: Asian grocer ones are never pre seasoned. Need a very good, thorough scrubbing and then season it with oil over high heat.

                  @nubzy: You testing your random Asian grocer wok's metal composition? No name Chinese setups don't give a (profanity) if there isn't a Western brand breathing down their neck.

    It’s not design for Asian wok stir fry. The thick, it requires longer to heat up, handle it’s hard to lift.

    My take - Asian wok frying does not always need "wok tossing".
    A good rigid wok spatula to stir and toss is plenty sufficient.

    Also in the Asian restaurant kitchen where the wok sits on the jet gas burners, the tossing action, with the 32-36in carbon steel woks, is aided by pivoting on the lip of the burner. With practice, pulling back and a quick wrist flip pivoting the wok down and up very quickly, tosses the food in the wok.

    De Buyer is probably too thick/heavy for the typical home gas stove. Furthermore the small flat bottom with the steep sides mean the wok is hottest around the sides. With smaller portions, the cook will tend sit on the flat bottom. Food and sauces around the side will burn faster as food will not be cooked/fried around the hot spots as much.

    Caveat - just a theory, as I have personally never been tempted to this De Buyer shape though I've a couple of their frypans.

    Personally a flat bottom is easier to use and toss and the helper handle is a god send,

    Agree with everyone else get one from Asian supermarket.
