We recently bought a cellular Apple Watch for our child and set it as a family member watch with a Truphone plan.
It seems we can’t install Spotify on it as it needs the iPhone companion app.
We have an old iPhone 5 so we may need to sync the Apple Watch using his iiCloud account.
What’s a decent esim plan nowadays?
Sorry, meant an esim plan for the watch (Series 7). I wasn’t sure if the Truphone plan would still work if the family setup option wasn’t selected.
But it seems like the iPhone 5 won’t work anyway. 🙁
iPhone 5 won’t pair with any recent AW’s. Only the Aw series 1 & 2

If you're only considering Apple, consider one of those cheap refurbed iPhone SEs that get posted here once in a while. Should be able to pair an AW to those just fine.

Amaysim do esims and have some cheap plans…

No idea if an iPhone 5 would still work nowadays but you certainly don't need an esim (which it doesn't support anyway). WiFi-only connection should be sufficient to setup.
