Is it possible to use the Echo buds (purchased yesterday for $10) without selling my soul to Amazon? I only want to use them as blue tooth noise cancelling ear buds, so no need to turn on or sign up to Alexa. My phone recognises that they are there but says it needs Alexa to connect.

I have the Echo Frames and use them for hands free calls, and some Spotify. They keep telling to connect them to the Alexa app but I haven't and they work fine. I'm guessing the buds will be the same.
Watch reviews online, that'll give you an idea.
From what I understand the Alexa app on your phone is useful for setup and EQ, but you can remove the app afterwards and also on the earbuds you can disable Alex (from the Alexa mobile app coincidentally)
