It's been about 5 months since we've had a 500g/1kg Moments to Memories deal and more than 9 months since we've launched a new Carbonic Maceration Single Origin. We've seen an uptick in separate requests for both recently. You ask, we listen, so here we go :)

We're offering you a 40% discount off our crowd favourite Moments to Memories blend and 25% off our newly launched, incredibly delicious Nicaragua El Árbol Carbonic Maceration Single Origin:

Some helpful info:

  • You're welcome to place multiple orders scheduled for dispatch at various dates (delayed dispatch) to make the most of this deal, we strive to dispatch our fresh coffee within 48 business hours of roasting
  • We're happy to accommodate dispatch date changes, you just need to submit your request within 60 days of your order being placed and at least 24 hours prior to the current dispatch date selected. Please submit date change requests via a reply email to your order confirmation
  • One dispatch per order
  • If you select 500g as a quantity please ensure you also select 500g as the packaging option. If 500g is selected as a quantity with 1kg as the packaging selection the product will show as "unavailable"
  • 500g bag packaging (it's resealable) is also available for orders larger than 500g this is an extra $3.60 per kg including the discount (normally $6 extra per kg) to cover the extra bag/s, label/s and time it takes to pack

      Well if you decide to pull the trigger and order your first Carbonic Maceration I believe you're in for a real treat, as this Nicaragua El Árbol Carbonic Maceration Single Origin is amazing. Due to the roast profile and flavour I'd recommend sticking to black coffee or a macchiato with this CM, rather than milk based coffees e.g. latte. Don't get me wrong it's still delicious in milk based drinks, however a lot of milk could overpower the flavour resulting in more milk flavour than coffee. Perhaps you could place a combo order, CM for black and Moments for both black and white coffees :)

      I believe you're in luck. As per the description on the product page "Brew Method = Light-Medium omni roasted to suit Pour Over/Drip Filter and Espresso." Although not specifically a filter roast, from extraction and flavour perspectives it's fantastic as a Pour Over. This morning I decided to start my day with a Nicaragua El Árbol Carbonic Maceration Single Origin Pour Over, followed by the same coffee as an Espresso for brekkie, kicked off my morning wonderfully :)

      Wonderful news about another potential order from you, it's important to keep the fresh coffee and Tim Tam party in perpetual motion. Don't get me wrong, this particular CM is quite tasty in milk based drinks (some CM's don't pair well with milk from a flavour perspective). I'm just recommending this one for black drinks as I know too much milk can really overpower the flavour of this CM. I do appreciate due to the unique process and 88 score the price is notably higher then Moments. With a higher price, people understandably expect something quite unique and extra special, which I believe this CM is. As such, I don't want people making a large mug of milk based coffee with this CM and being frustrated thinking that it just tastes like a cup of hot milk :)

        • Hey @jonnoyeo doesn't have to be a 3/4 (magic), can be topped up, our milk based brew guide is recommended for 150-200g of textured milk :)

  • Wonderfully perfect timing, I should exhaust my supply the same day my new order arrives. How long do you recommend for off gassing freshly roasted beans?

    Also your recipe on the bag usually recommends a 20s extraction, is this following a 8-10s pre-infusion?

      Woohoo for nailing the timing!

      Appreciate the questions. Our freshly roasted coffee will be good to go as soon as it hits your doorstep, that said peak flavour will be 1-2 week from the roast date. Our brew guide do range across coffees, generally speaking our guides range from 18-20 seconds including any pre-infusion (1:1 ratio for ristretto) for milk based coffee and 27-30 seconds including any pre-infusion (1:2-1:2.5 espresso) for black or large milk based coffees :)

  • Hi team, just received delivery of your Brazil SO so I'm good for espresso, but very interested in the CM - would you say it's a "fruit bomb"? Been chasing very fruity / juicy / floral beans for filter - but I notice that the Fruit to Choc ratio is somewhere right in the middle. Maybe not the right one for me?

      I'm glad you reached out to check, better safe than sorry. Generally speaking if something is below a 6 on our fruit to choc scale it's approaching the fruit bomb category and for extra measure if it's a light or light-medium omni which the product page specifically recommend best enjoyed as a black coffee. You're always welcome to reach out and double check with us prior to ordering…great news for you is I can confirm I'd class this CM as a FRUIT BOMB :)

    Hey, what beans do you recommend for a Moccamaster? I usually go for whole bean filter roast. Any suggestions?

      From an extraction perspective, both options should works really well, so the choice really comes down to personal flavour preference:

      -Moments to Memories is the winner if you enjoy more of a chocolate coffee
      -Nicaragua El Árbol Carbonic Maceration Single Origin is the winner if fruity coffees are you go to

      I can't guarantee this with absolute certainly. However, unless the delivery truck got a flat tyre and you lived in a super rural area I'd be astounded if it didn't arrive in time :)

      From an extraction perspective all of our coffees are terrific for Pour Over, as such the winner for you will come down to personal flavour preference.

      A few quick questions to help me narrow down the ideal choice/s for you:
      1) 1 being fruit and 10 being choc, what number are you in terms of flavour notes you enjoy in your coffee?
      2) Do you enjoy coffee with a high, medium or low acidity kick?
      3) Do you enjoy your Pour Over black, with a dash of milk or both ways?

        I think from 1 to 10 I'm definitely more chocolate than fruit.
        I would say medium acidity
        And I drink my pour over black 99% of the time.

        Perfect timing, I just ran out of my usual coffee.

              We generally have a wide variety of flavours across our range, so if you like our style (which it sounds like you do) I think you'll hopefully be able to find one of our coffees to be your all time favorite.

              If you're keen for stronger chocolate notes, then I'd recommend trying our Brazil São Paulo Single Origin or Swiss Water Process Decaf (yes it is decaf, but it is also delicious). If you'd like something somewhat similar to our Moments to Memories blend, but with a bit more of an acidity kick, then perhaps try our Thank You blend. If you want a bit more of an acidity kick and a bit fruitier, but still with those familiar go to clean chocolate notes, then our Colombia Cauca Single Origin may be the ticket for you. Finally, if you ever want to take a walk on the wild side and try something way left of your usual go to flavours, just send an email to [email protected] and I'll go over more recommendations :)

  • How's Moments to Memories vs Thank you blend in term of roast level? Are they similar?

    Didn't mind the TY blend myself but family didn't like it as much as it was a light-medium roast.

      Moments is a medium omni roast in the same way as our Thank You blend. However, the flavour notes, sweetness, acidity does vary. In a nutshell Moments has more chocolate notes and a slightly lower acidity kick. For me to give you a more specific answer could you please send an email to [email protected] as I'll need some more details about your family's feedback to figure out if the solution is tweaking extraction settings or simply there are different flavour notes which better suit your family's personal flavour preference.

          Congrats on taking the leap, always an exciting time upping your coffee setup. We need to get extra stock in when a product is on special, so we can't generally add extra product on the fly. Perhaps you could get a small bag of our fresh, delicious decaf at regular price just to tie you over and then make the most of the next time it's on special by using our unique scheduled/delayed dispatch system :)

  • How do your recommend freezing?

    • Hey @smator appreciate you taking the time to reach out!

      There's a number of methods, each with a variant level of connivence and quality results:

      1) Simply put the sealed coffee bag straight into the freezer. This is the most convent method and will extend the freshness by months
      2) Put the coffee in a fortnights supply portions and then seal in a vacuum sealed container. Freeze 1-2 weeks after the roast date. This has a medium level of convenience, but will mean when the coffee thaws it'll be hitting peak flavour and will extend the freshness while frozen by even longer
      3) Pre-portion single doses, then vacuum seal each dose and freeze 2 weeks from the roast date. This method takes the most effort, but in doing do you'll get the best results. This will extend freshness while frozen by more than a year when using a high quality vacuum sealer

      Once the coffee is out of the freezer it's best enjoyed within a month for option 1 and about a fortnight for options 2 and 3 :)
