Quality Knives/Knive Set

Hi all,
I'm not sure where i should be posting this. Basically i'm looking to buy a new set of knives, ive always just used cheap knives that i bought from woolworths and its usually been enough. Lately, im doing a lot more cooking at home, and i find the cheap knives quite dangerous to use (they get blunt so easily). So i've been looking around for some good quality knives to buy, the problem is, i don't really know too much. Any experts out there who've come across some good knife deals?

Did some searching around and found this -

was about to buy it on the spot, especially since shipping is free, but that knife block is quite horrible looking, ive had friends suggesting to get Global branded knives, ive used a couple before, but can't really find any around that's around my budget (<$300).

Thanks in advance for any help!

    best budget knives are victorinox

these four are the most useful: santoku/cook's/chef's, paring, tomato/serrated, bread

I bought this on special just after xmas a couple of years ago for $30. Im not a chef, I do cook most nights though. They should last another 10 years. They arnt as comfy as another set they had there also at 70% off. balance was the same. While it would be nice they were nearly twice the price, if I used it all day every day no worries, get the best

They do get blunt after about 3 weeks of normal use but that is probably more because of the crap chopping boards- I cant justify wood.

This does pretty much everything I need. We also still keep our shit knives since the gf has a habbit of using the benchtop as a cutting board.

I use a cheap cleaver for bones- even used a hammer on it.

I use a cheap filleting knife for fish, its amazing for it. Gets blunt super easy but is razor sharp just after sharpening. Since I dont fillet much its perfect.

  • +1 for victorinox. But I have a Wiltshire Staysharp knife block set with 5 knives that I bought for <$100 (from myers I think) that is perfect for my daily kitchen needs. They have rubbery grip handles and I sharpen them once a while in the builtin sharpener on the block.
Still going great after 10 years.

It is the same as these knives but in a wooden block set of 5 :

    • btw, staysharp scissors are great too.

  • thanks for all the replies so far.
ive looked a little more around and i think im just going to get a knife set now. with a block and all.
so would you guys take the victorinox sets over the furi set i linked?
harvey norman seems to have a nice selection with decent prices.

anyone bought any of those? which one would you suggest

  • If you want good quality knives, disregard anything that doesn't specify the exact type of steel used because it's likely to be rubbish.

Have you considered just buying a few good knives rather than a knife set which will be of lower quality and probably have stuff you don't need? I'd look at the Shun chef's knives as a start, laminated VG10 is close to as good as it gets for durability and sharpness.

An excellent read if you have the time: http://zknives.com/knives/kitchen/misc/articles/kkchoser/ind…

  • wow, theres more to this knife buying business then i expected lol.
i was looking to just get a decent cooks knife.
but the gf wants a whole set, she says our kitchen is missing a nice knife set. got to please the lady, or ill be doing the cooking for the next few months.

    • yeah dont fall for that crap.

My gf said the same thing just the other day. They just see something and think "hey lets buy that"

In my case I already do 90% of the cooking.

In your case you could tell her to fob off and stock up on mi goren

  • Go to peters of kensington IMO and see what feels comfortable for you. In my case, I bought a wustof (and love it) http://www.petersofkensington.com.au/Public/Wusthof-Trident-…

I bought that and a good paring knife. Other than that I haven't used any of the other knives that much. I actually think victorinox's are great as well and I don't think you should decide till you get to the store. Definitely invest in a whetstone and a honing knife! If you dont hone (straighten) the blade of the knife every time you use it, your knife will be as dull as a woolies knife in about 3 months (google on youtube how to hone your knife). Then you can either sharpen your knife on a whetstone, or get a professional to do it for you (about $8 a knife?) on a yearly basis and your knives will be as good as new!

Also upon looking at your furi knives, you should actually try it out at the store. I've held furi knives and they feel awkward to me :S
