Ok I've recently seen that Meta AI has been introduced to WhatsApp. It works for both individual and group chats. I'm just concerned about chat privacy and what data the AI is collecting. Just wanted to get the opinions of others and if there's a way the AI can be turned off for individual chats.

Unfortunately this is 100% correct.
Facebook makes money through advertising- the more targeted that advertising is, the more they can charge for it.
This is pure and simple, another way for them to harvest data that will enable better ad targeting and more detailed data/insights about you to sell
There's far far far more going on than just advertising data.

LOL it's no different to what Meta has been collecting for decades, essentially ALL OF IT ;)

There are a couple of better options listed above, but be aware that all contain NSA/five eyes backdoors
Grab an Android device and load GrapheneOS if you are really that concerned (it's the best combination of usability and security for modern device functionality)
It's a Facebook product, they never been big on privacy.

Don't really care about the data collection etc.
It's the Clippy-esq annoyance of the buttons and search bar that I don't want to see.
everything that runs on your computer and phone is AI. Even if it is not called that.
You cannot be concerned about privacy and still use WhatApp… Choose one.
