Stupid question, if I buy Apple gift cards from this deal and don't use them all to buy an Apple Watch, can I add the rest to my Apple ID for our Apple Music subscription?
Yes. You can partially use a gift card and the remaining balance will stay on that gift card. After that, you can do whatever you want with that balance including adding it to your Apple Balance/Apple ID for such things as subscriptions.
Just be careful though, once you add it to your Apple Balance you can’t get it back, though :)
