I'm looking for either a 14" or 15" laptop with 32GB of RAM and 1TB of SSD space. I don't need any strong GPU for it as I won't be gaming on it. Just basic graphical capabilities will be fine.

why its a best decision?
macos is great! Except if you want 32GB/1TB that will be $1,140 extra, and they are soldered in, so no diy upgrade.
OP, the best way is probably to find a bargain (possibly A-grade ex-lease) and upgrade the RAM and SSD yourself.
Are you OK with a basic FHD display?
If buying new, consider ARM over Intel.
Benefit of the doubt, Mac does handle memory better than PC, so the OP doesn't need 32 GB, but still, PC is way cheaper and a lot better than it used to be. For the last decade, I have never had to restart my PC or update a driver to fix a problem.

I switched to Mac. Honestly one of the best decision I made.. I am not saying you should. However, I am saying do your research on that as well
