Hostess is part of NetRegistry so not some one-man garage operation (which is unfortunately common in webhosting business). However I do not have any experience with them.
As of web hosting companies in Australia, I have only used Jumba before. They are cheap. Someone might say that they are also nasty, but I am fine with them. Personally I found the best way might be posting your request at Web Hosting Talk AU and let the hosting companies bid for your business :) (never tried it but have seen it happened there numerous times)
