The study you linked there seems sciencey, however the patients were self-reported as having a gluten sensitivity. That's hardly very clinical or science based.

Aim: To investigate the notion that a major effect of gluten in those with NCGS is on mental state and not necessarily on gastrointestinal symptoms.
tl;dr, there is little if any real evidence that a gluten free diet has any positive effect on people that don't have celiac disease.

All the subjects (and there were less than 2 dozen of them) had irritable bowel syndrome. You should probably add that to your link at the top, i.e. "Gluten may cause depression in subjects with non-coeliac gluten sensitivity, and with irritable bowel syndrome"
