It's quite unusual to order extra eggs on a Big Breakfast type dish anyways…like ordering a bowl of chips with a side of chips lol

Been there just once. I get what you mean the order is weird but at the end of the day customers=$$$ therefore they get to do whatever pleases them, plus they don't really need to know that the staff are bitching bout them. We all know it happens!
Of course totally agree with you, I was just wondering as an outsider if she "deserved" to be called stupid or not :)

why do they have a function on their POS that allows that to be placed on a receipt. craziness.
Notes for kitchen, not uncommon at all. The wait staff have to enter some strange requests sometimes, and it's easier to have it in writing. Kitchen docket then gets converted to receipt.
Either way, someone in the chain should've noticed it!
