Absinthe traditionally has Aniseed, Fennel and Wormwood (Artemisia absinthium) as the three core ingredients as well as other herbs that vary from absinthe to absinthe. Artemisia absinthium is the main ingredient that makes absinthe absinthe and we grow and harvest our own wormwood at the distillery, we also uniquely use Aniseed myrtle (an Australian native) instead of aniseed which makes our absinthe Australian yet still a real absinthe just as it was made at the end of the 1800's at the height of Absinthe's historic popularity.
And yes our 2016 Blanche Absinthe would be a perfect introduction for mum to Absinthe and certainly beats a bottle of wine.
