  • I would never use a nonstick wok. Can never get the "Chinese" taste by using one of those, because it cannot generate enough wok-air.

        If you ask any chinese cook they will tell you what it is. Its that distinct taste when they do a stir fry. Usually you can only get it by using carbon steel woks or stainless steel woks at high temperatures to stir fry.

        I did a very literal translation of it which is "Wok-air" but you can read an actual explanation of it on this site:

        Its sort of like attempting to sear a steak on a non-stick vs cast iron….

    • I do 120% agree with your point about wok air, but
      1. can hardly get wok air from stainless steel ones too,
      2. the best is get an iron wok, but where can you find one here in Australia? even if you manage to get one in some Vietnamese suburbs or Chinese supermarkets, its made in China and I worry about the quality, who knows what chemicals are used when they paint the iron wok…
      3. assume you get a safe iron wok, look at those western gas stove here. I can't find any of them gives me flames that is strong enough to generate wok air.

      At the end of the day, I do miss the wok air I enjoyed back in the good old days at home, but its Australia here… I wouldn't expect much.

        Hook it up to a gas cylinder like the ones used on BBQs, you can get nice hot woks that way.

        note: bunnings one is just a reference, you can get larger ones like 4 rings etc.

        • Get a Rambo burner. Awesome for Asian cooking. Just don't use it indoors.

        • yes, I know what you are referring to. I find them in Vietnamese suburbs too, but if you are renting, like I am, most agents would ask you to remove it from indoors during routine inspection :(

        My parents got a iron wok from a shop in Burwood NSWb run by hongkies. I myself am wrestling with the fact I cannot stir fry because I am renting a place ATM with an electric stove top. Does anyone know if flat bottom woks are a joke or what

    • its not even a wok really. Flat bottomed instead of round bottomed its basically a frying pan.

      • But you can toss and stir things around a bit more freely than if it's in a frying pan? :( I've tried but I end up pathetically flipping things quickly and stirring quickly

      I want to know if this has soft bottom for glass stove.

        It has a pattern sprayed on the underside, feels quite rough to the touch and not something I'd want to be sliding across a glass top but not sure, glass might be harder.
