I stopped going years ago for this exact reason too.
$40 to wait an hour for an overcooked steak, only to be told they can send it back for another long wait and no guarantee it will be cooked any rarer because of the "18 hour slow cooking".

I'm assuming you had their "prime rib steak", which isn't a steak, it's just a roast of the rib cut.
Sounds like they overcooked the entire prime rib, which means they can't do the quick sear/heat without overcooking the whole thing, which means they screwed up. Or you were ordering pretty late, most restaurants keep their prime rib cooking to keep it warm, if you're ordering at 9pm it's going to be near impossible to get it rare.

Well there has been another 2 (1 old, 1 new) in Perth gone recently also, so something must be up. A 3rd is also on a temp close (opened last year?)
