What didn't you like about the Wills Domain Block 5 shiraz?
If it's anything like the Cuvee d'Elevage, it probably sits in the overpriced bucket. I picked up some of that for $35 a bottle a couple of years ago and while good it definitely wasn't anywhere near $75 good.

I'm a big fan of the Kangarilla zinfandel but if the cab sauv is anything like that it'll need quite a few years first. Looks like it's big in acid and tannins, but I have no idea how well it'll hold up.

Nah they are usually quicker than that - maybe a couple of hours. But it may take up to two days.
