  • Just FYI - 25cm is quite long. Typical home kitchen cooks knife is 18-21cm. It's nice if your block is large enough :)

    • you'll find that people who instruct on these things recommend a 10" chefs/cooks knife
      eg from the books Mastering Knife Skills and An Edge in the Kitchen.

      You mostly don't keep 10"+ knives in blocks.

      • I designed my prep setup on a chefs advise. Board should always be twice as deep as the length of the most used blade.

        I have a 24cm blade on a 900x500mm board and its the right fit (that's a biiig board for a home setup). A 25cm blade on the typical boards sold at the shops is going to be very disproportionate.

                @StickBug: I just bought one, I know haters gona hate Shun, but this price, it is a good deal

                  @Yaren24: I'd struggle with someone disliking or hating a Shun knife and would have to question their understanding of these very special knives. It would also suggest to me that they have limited experience in using other knives in order to have a good sense of comparison. But then, I don't like Globals and some swear by them, which is ok… to each his own as they say! I just don't believe they have great edge retention with respect to similar usage scenarios, the pricing and touted quality of material. Pretty sure they are made in China now, but happy to be corrected on this. To me, the thing about Shuns' is that some have thinner blades (easier to sharpen) and some have quite thick blades… which can take much longer to sharpen IMO and experience, certainly dependant of just how dull the edges are to start with as with any knife.

                  The ones with thicker blades take more patience & expertise but even the thinner ones command a good amount of these two aspects. I've certainly seen my share of inward bowed and whacky banana profiled edges 'effected' by guys who imagine they can stone sharpen or whatever else method they've used. Not to mention the heels becoming a mile longer than it's meeting edge was when the poor knife was new and dare I say beautiful not so long ago! IOW the heels should be reduced as well! (exception being perhaps a filleting knife)
                  I've seen these whacky' edges created over time by well meaning and enthusiastic owners or those with chronic ego issues who imagine they are great experts at everything… I'm sure you know the type. The kind of souls we'd all rather avoid and forget.

                  Shun knives are excellent IMO BUT like all knives - they get dull. The matter is if the owner has what it takes to get it real sharp again without ' stoning & steeling' away its effectiveness and beauty (more specifically its edge geometry) in a few short years if not months.
                  Some guys are great at playing guitar, some are great Chefs'. We can't be great at everything, thats why I like to eat out sometimes and go to see a band IYKWIM. I'm not the greatest cook and not a very good guitar player either… thats for damn sure! :O]

                  This is an excellent deal for anyone wanting to have a potential life long and pleasing knife to work with. Only 1 criticism of Jap' knives in general… they are typically made very 'hard' so if you drop them, 9/10 chance it will snap somewhere along the blade. Softer knives are more pliable ('bendy'), less expensive and more likely to 'bounce' when they hit the floor. This is why I very much/also like German, Brazilian and other slightly softer knives. They are much more 'forgiving'. Easier for the average user to sharpen as well IM0.

                  • @[Deactivated]: I fully agree with your sayings, it is very hard to get a VG10 MAX knife (10 inch) under $200 in this country, I have Global, Miyabi and Kiwi and Victorinox. I personally didn't like the handle of Miyabi hence leaving in the storage. When people say bargain, it has to be like saving 30% more, but with these knives though, they don't really go on sales, most of the other places sell this knife minimum $230 - 250, so 189 is def a good price. Looks are subjective, I think people are just greedy nowaday. and expect too much discounts from a seller, I recall last time a Victorinox Santoku from Megaboutique, it was a fantastic purchase as well. Haters can say oh you know we can get Misono knives for better quality, but how much are they paying for really, I bet extra $50 won't justify their thoughts. I know this is not the best knife, but for the value, 10/10
