Why Does Cheesecake Shop Take So Long to Prepare a Cake?

Hi, I've always wondered why the cheesecake shop takes so long (10-15 minutes) to come out with a cake.

Even if the store is empty, a simple baked cheesecake will take 15 mins to prepare. What on earth are they doing at the back???

Does anyone have any insight?

    They need to thaw it.

    • so true.. 2 massive walk in freezers and no coolroom besides the display fridges
      Cakes are made fortnightly or monthly depending on the volume of the store

    • Do they use a microwave to thaw the cake?

        Most shops have at least one female to lend a hand while beating the batter.

  • What cheesecake? Those aren't cheesecakes, these are real cheesecakes!!.

    Pity they don't have shops in Vic.

  • I don't have any insight but would also love to hear from people that have worked in a cheesecake shop…

    I am guessing that they decorate the thawed cakes at time of purchase as the cream is what will go bad before the cake itself?

    I see the cakes advertised as 'baked everyday', but I just don't think it is completely true, just doubt every shop bakes every type of cake every day…

      They are baked every day, just not the one you're getting.

    It is because they are harvesting the cheese from the cave underneath the store, then making and baking the cheesecake from scratch.

  • I’ve had a partially thawed cheesecake from them. Not impressed and I only buy very rarely since.

    My favourite was the fruit flan, but sadly our local store closed up several years ago and the other stores are just too far away.
