You can swap it for any gift cards sold on their site, i usually swap it for coles or woolworths gift cards
I usually try to swap them for somewhere that we can't easily get discounted gift cards for elsewhere, such as Bunnings. Only problem with Bunnings is they don't offer gift cards below $30 on Prezzee so you can't use the bonus $10/$15 cards in these deals there.

nothing stopping you for making more accounts for your family members as long as they have a separate phone number. I have just signed up my mom in law who is visiting in Australia and already have account for me and Mrs so managed to get this deal 3 times.
Edit- all 3 paid by same credit card in my name
Their system has been blocking purchases that is linked to the same credit card and who knows may also blocked based on IP address.
I did it for both me and my partner on the same card without issues.
