I am the head distiller at a small distillery called Wildspirit in Brookvale, NSW. We are releasing early our next gin, Wildspirit Unpeeled Mandarin Gin, to fund the purchase of new equipment that should help us get through the next few months.

      So because you can buy some gin for $30 a bottle, no other gin can be a bargain?

      unlike whisky that needs to be aged for years in barrels, gin is distilled ,bottled and out the door, only real expense is botanicals and gov duty, not ageing or barrels / casks.
      so i understand why some might regard $95 as a bit pricey , though tanquery 10 is about $70 bottle and a mass produced product.

      interesting how some distillers are turning to making to hand sanitizers, one major australian distiller claims he can make 45,000 liters of alcohol per day …. the marvels of industrialization.

    I really, really love gin, and I really, really love mandarin. How forward is the mandarin flavour?

    I’m keen, but it’s still pretty expensive…

      How forward is the mandarin flavour?

      It will tell you within 5 minutes of the start of a first date that it's only looking for a physical relationship.

    • If you love gin & mandarin this is for you – starts strong with juniper, then a burst of mandarin, followed by spices - cardamom, cassia (cinnamon), anise

      We just did a tasting session with some gin experts and they loved it.

  • How does unpeeled mandarin differ to peeled in flavour?

    • i was thinking the same.. i think it’s supposed to be gin infused with mandarin peel. unpeeled just makes it sound odd.

        Also makes one wonder how they got the peel off without peeling the mandarin.

    • Peel usually has more bitter notes.

      • Pith in particular

    • Its a name that's a bit of fun, nothing more.

      We macerate the peel first for 24 hours to get the aroma out. Pith is removed to remove bitterness.

      We then macerate the fruit for a further 24 hours to pull out the full flavour of the mandarin. We give them a little squeeze too!
