Cool idea, if it was available in the northern burbs I'd be keen!

Are you the same person that posted it to the Melbourne subreddit?

    • +8

Not me , I found it on a Good Karma Facebook Group , glad to see it's making it's away around

  • +1

Good idea! Not available to me but would definitely get some done if it was.

  • +4

Nothing wrong with the service, but it's not something difficult to do yourself. Honing steels can be used regularly, and sharpening steels as needed.

Of course if you don't use good knives very often, it may be cost effective to just use this service rather than buying the sharpeners.

    • +9

It is actually quite hard to do yourself if you don't have the skills or tools.

      • +4

Exactly..it takes training and practise. Im too scared of ruining knives because I don't know what I'm doing

        • +3

Yep. There's also the CBF factor.

  • +5

I just use a whetstone myself… Probably don't do a good as job as these guys, but it works for me.

Finally a non Amazon deal. Good on ya for posting this. Let's look after the people that really need business!

  • Saw this on reddit. Lots of good feedback on this guy

Buy a Wushtof Classic 8 piece set for around $300 and get free lifetime sharpening. 10x and you've got excellent knives for free.

Or just buy a chef's knife for less.

    • Where have you seen an 8pc set for $300? Have been keen on a set of Wusthof's for ages, but can't justify the ~$800 price tag.

    • +1

I have wustof knives but can't find this free sharpening of them anywhere. Can you link me to the site?

    • +2

10 dollars each for something you use daily? That's cheap.

    • +10

Or you can buy a sharpener for $8, or buy a set that comes with a sharpener, or buy a set so expensive that you get free lifetime sharpening.

I guess what I'm saying is there are plenty of ways to not support your local out of work chef neighbour.

      • those that can should absolutely support who they can in their communities… not everyone can though + I thought this site was about bargains…

        • +2

It's a bargain local knife sharpening service, is it not

    • +8

An $8 IKEA knife won't cut the mustard because it's always blunt - good knives hold their edge and last forever. Invest in some better knives and you won't go back.

      • +5

is that the literal or figurative mustard?

      • Any examples of good knives from personal experience?

        • Very much personal preference.

I use and recommend the Global G48 18cm fluted chefs knife to friends. For me this one feels well balanced and comfortable to use and people actually get excited to use it.
We get it sharpened professionally every 2-3 months

Expect to pay around $80 delivered during an ebay sale

    • IKEA does have a decent $30 knife, can't remember what it's called but comes highly recommended.

      Those $8 knives are rubbish

      • -1

not sure how a sharp knife that works well is rubbish but ok.

        • +4

Everything should be sharp out of the box.

The question is, after 20 slices, 100 slices, 2000 slices, a cheap knife will go blunt VERY fast. This leads to the knife slipping from the food it was meant to cut and with unintended force, a blunt knife can cut into other things.. like your fingers.

You should be spending at least $40 minimum~$100 for a main knife that you use daily, Victorinox is the cheapest and bang for buck knife before you go into all these fancy Japanese knives/Forged German knives which cost anywhere from $100 all the way up to a thousand or so.

  • I'd like to know how he sharpens the knives.

I have a couple of Japanese knives (30 deg bevel carbon-steel) - don't want any knife abuse that damages the angle with grinders, sharpening steels, etc.

    • Japanese knives (30 deg bevel carbon-steel)

I gather you mean 15 deg bevel x 2, no Japanese knife, let alone German knife (usually 20 deg) will have a bevel that broad.

      • Yes. Thanks for correcting me: my santoku has 2 x 15 deg bevels, and gyuto has a single bevel.

    • If you're not already aware, and are in Vic this place in Richmond specialises in Japanese knives - https://www.chefsarmoury.com/

      Edit:

Looks like it's stopped at moment.

Joe just replied: "I use whet stone 400, 1000, and 2000 grit. And yes can do Japanese knives".
      Woot!

      • 400 is if you knife is borderline broken because you decided to try and cut some bricks in half, 1,000 cleans that up, 2,000 is normally skipped in favour of 3,000 as 1-2K is too small a step for the work effort, then usually to 5,000 for fine polish, 8,000 if you're really into it.

I know a knife sharpener by trade who is really struggling for business at the moment with restaurants closing. Be good to support those professionals too especially with damaged knife repairs or expensive knives as this is what they do day in day out

Global 2 stage ceramic sharpener $33 plus shipping. I've used this on the same set of Global knives for 15 years and they always come out perfect. There's a 3 stage now that's more expensive, but the 2 stage works fine.

I'm not knocking this deal for those who can afford it, but for those who can't, this is an option that doesn't require any skill (just follow the instructions).

      This can't repair chips though.

Not saying it's a bad sharpener, for quick sharpen job it is definitely better than a honing rod, but this won't straighten out an edge that's got a chip in it

    • +1

hhave to say I bought the 3 stage global minosharp one a year ago and been trying to use it on my global knife.

I dunno, I find that it's just not that great. Maybe Im not using it right.

      Whether I run it through 8 times, 20 times, 50 times…

and the front 2 inches doesnt get to touch much of the ceramic wheels, so stay blunt.

If anyone can recommend a knife sharpener near Hungtingdale or south east suburbs thatd be great

    • I haven't chipped or bent my 6 piece Global set in 15 years, so been fine for me.

And it sharpens them very well, ripe tomatoes cut like butter afterwards. Light to almost no pressure (let the knife weight do the work), 7-9 times per disc. Sweet as. Gets to the tips as long as you roll the tip down at the end of each stroke. Can't comment on the 3 disc version.

Not as good as the Samurai Max… obviously!

  • Would def take up this offer if in Melbourne's east

  • Pricey, but happy to support a local

  • 2 knives? I gotta tell ya this is pretty terrific

  • -2

This bugs me a little too much.
They don't sterilise them. They sanitise them.

He's a chef, gotta get the food safety lingo right!

  • Anyone used this service recently? Have a few knives I want to get sharpened, including a knife with Japanese blade (different angle to western blades). Any suggestions?
