  • what's the point spending $150 on a meat thermometer when you can't leave it in the meat, how many holes will be left on the steak when it's done?

      When smoking large cuts of meat, brisket/pork butts etc, you'll want to probe different sections of the meat quickly without leaving the lid on your smoker open for extended periods as doing so let's the heat out and makes it harder to regulate temps.

        and how many times and how long would you need to keep the lid open to use this device for that purpose, for 10+ hours?

        • I have a main probe for a wireless thermometer that I leave inside the brisket.

          I use an inkbird thermometer like this one when the brisket is near done. It can read 210F in the thin part of the flat, yet 178 in the point.

          I do it once my main meter in the thick part of the flat reads 198F and then every so often

    I can't believe they put a stupid conversion table instead of making the conversion automatically
