Greetings keen bargain hunters.

Ya KEB (Knife Enthusiast Boi) found something that might suit for all you peoples who bought knives this season.

IF you recently bought some japanese knives, Global, Shun, Yaxell, or otherwise, you will no doubt be thinking about how to keep them sharp.

I am a firm proponent of whetstone sharpening, as I believe it gives you the best results and wont re-profile and damage your knives in the long term as the wheel sharpeners (i.e. Minosharp wheels) do.

Global sell these rails that help you get the 17 degree angle that japanese knives are ground to, which helps take the guesswork out of sharpening.

I also have these, but i use a different technique now. Still acute deal for newbies.

    Thanks, grabbed one. I have a knife most ozbargainers would be appalled to know the price of and I have been to scared to sharpen it on my stone for dear of scuffing it up. This will be useful until I get more confident.

    • Do share what knife and how much :D.
      There is always a potential to scuff it up because of the transference of material from the stone to your fingers, to where your fingers is applying pressure to the blade.
      I used to hate the thought that I might be putting micro-scuffs on the blade, but now I appreciate it as "patina". Means it hasn't been just on display :P

        I have a Kohetsu Aogami Super 210mm Gyuto as well which I am happier to practice sharpening on. Last time I sharpened it though I rubbed the flat edge of the knife on the stone so there are scuffs all over the stainless cladding. Just want to avoid that on my mirror polished Damascus knife!

          Wicked Edge Gen 3 Pro may solve you problem.

            @O O: I always thought ZDP was frowned on by purists… unsure why a top end knife would use it.

            @O O: The Kohetsu is great. The cladding is on the vast majority of the knife and as long as you don't leave it wet or with vegetable juice on it, it won't rust. Over time it gets a patina that seems to protect it from rust as well. I usually wash it and dry it a few times while I'm cooking to make sure it is never left wet.

            The Sukenari is as you would expect for the price. I expect to use it for the next few decades without issue. Incredibly durable edge for as hard as it is. Still super sharp after a months of daily use. I have chipped my Kohetsu (I think I sharpened it too thin) but can't see that happening on the Sukenari. Completely stainless as well so I don't need to worry about it until after I am finished cooking which is certainly a plus. It is a beast of a knife though. Quite hefty but perfectly balanced and a lot of fun to use. Always offer to chop things when it is time to cook. And beyond all of that the thing is a work of art that I love using. So while I couldn't have brought myself to buy it given the price, I love having and using it.

            As for the wicked edge, I really would just prefer to learn to be proficient at sharpening on a stone. That's why I got these guides, to get the feel for the angle. If I got a sharpening system like the wicked edge, I would never get a feel for it.

          • @KnifeEnthusiastBoi: Fantastic knife. Would have kept it as my daily driver if it weren't for being given the Sukenari. Takes and holds a fantastic edge and is relatively easy to maintain for a non stainless knife.

    Lol i saw a mate using this and i literally laughed out loud.
    He put it on his global blade then sharpened it through the pull through knife sharpener…… I asked him about it and he said "I use it as a guide rail"…..
