maté is stronger and more bitter than any other tea I've had. If that's a flavour profile you're chasing.
Just to add to your comment, if you don't mind … yes, it has a bitterness to it, but - it also depends on the processing style: "Brazilian" vs "Argentinian". Brazilian is fresh, Argentinian is "cured" - aged. A very big difference in flavour. Tribal Trading sells fresh Brazilian, less bitter, more aromatic… worth trying… We have tried Fresh Green variety in a Kombucha brew - delicious, and energising!
I wonder how this would go in a Kombucha brew.
