Should be good I guess. Given that the Nintendo branded Sandisk is basically this - https://www.amazon.com.au/gp/product/B073JYC4XM/ref=crt_ewc_… slightly cheaper one. I do not think the Endurance will give significant performance benefit over the Ultra.
Maybe it would last longer. Definitely go Sandisk for compatibility

Would the speeds be good enough to film in whatever highest quality these devices can handle?
I would assume 4K 60FPS as a minimum.
From my research you should be fine with 4k 60fps. Any u3 (min 30MB/s) should be fast enough.
