      Did you mean why not plastic handle or wooden handle? This pan seems to be similar to those that chefs use, those pans will have metal handles.

        yes. It's designed so you can put the pan in an oven without it melting the handle. Good for cooking steaks

        Just need to use a tea towel when moving the pan

        Most chefs will hold a towel (i.e. gordon ramsay) while using these pans.
        But no, it isnt nearly as hot because the handle is made of softer iron.

        Alternatively you can buy a silicon handle cover. for when you aren't using it in the oven.

      it's a very small pan, would be great for quickly whipping up a fried egg. Or browning spices

        Bought one anyway. Might grab 2 steaks on the weekend and do a comparo between these pans.

          This pan might be too small for steaks, but would be perfect for cooking up single serve burgers, eggs, etc.

          I dont think 8 5/8" is the measurement of the "flat surface" of the pan, its the total size.

          Its more like 6" at the bottom.

          These types of pans are awesome….much quicker to heat up than cast iron. Also find much easier to clean.

    • Will be worth getting. Heats up much faster than the Lodge ones do, but won't sear as well IMO

        Already have the bigger matfer, and have a similarly sized pan to this that i use to fry single eggs. But yes, it is a good investment

        I'll have to see when it comes whether it really is going to be useful or not, but at the very least the spot welded design is going to make me want to pick this one up more often than the pyrolux cheapie.

        On another note, what's the deal with the neg?

  • It says all hob types, so I assume it contains enough ferrous material to use with induction.

    Anyone here used one with induction?

      I do. Induction tend to warp these. Always start on the lowest power and let everything heat up evenly first, it'd still be a lot quicker than gas anyway. Never season these on induction.

  • Do you season and not wash this type of pan? The last few pictures are all showing charred/burnt/black pan?

    • Definitely needs a season before you can use it. Probably 3-4 coats to start with.

      You can wash a seasoned pan, but I wouldn't hard scrub with detergent or put it in the dishwasher. I clean mine scraping with a plastic/nylon scraper under hot water, then rub with a paper towel. Then back onto the stove on low heat for 10min, then a super lite coat of oil (rub the oil on with a paper towel).

        Matfer's suggested seasoning technique is just a simple 3 step process, no need to go full black seasoning, but it's personal preference.
        I like to get the bottom of my pan at least brown.

        If you need to scrub off residue I would recommend getting most of the oil and residue out first, combination of coarse salt and oil and paper towel to scrub the crunchy bits, thorough rinse hot water to get all the salt out, then low heat on stove to dry and light coat of oil after it dries.

        Done it many times now, works every time.

    • Would say avoid. Looks very similar to the pyrolux ones. Pyrolux ones are a little on the thin side, a little more susceptible to warping.

      • they said theirs are 3mm thick…is that thin? whats the normal thickness?

        • pyrolux is a bit less than 2mm thick which is thin, 3mm is quite alright, i think Matfer is 2mm.

          Freshaustralianstore sounds good, i particularly like that they have a smooth cast iron. Have no experience with using them though.

    Received and mine is going back. there are flaw/blemish like one of the amazon reviewers.

  • Mine came today. Was perfect, no issues at all apart from slight scratches. Seasoning covered anyway
