  Are these the FU-series with VG10 core? It doesn't specify this in the description, only "crafted from two layers of stainless steel, with a pure, high-carbon and molybdenum core". This sounds like it, but would be a shame to end up getting the TF-series that likely doesn't use a VG10 core.

    I've ordered from Peters of Kensington eBay the following in the past:
    * Tojiro DP3 Chef's Knife 24cm - this is the F-809 model with UPN of 4960375038090 (see https://www.tojiro-japan.com/products/tojiro-vg10-clad-steel… for official specifications)
    * Tojiro DP3 Santoku Knife 17cm - this is the F-503 model with UPN of 4960375015039 (see https://www.tojiro-japan.com/products/tojiro-vg10-clad-steel… for official specifications)

    These knives have VG10 as core steel with two layers of 13-chrome stainless steel cladding. VG10 is HRC60 per http://www.e-tokko.com/v_gold_10.php?lang=en and 13-chrome stainless could refer to a number of related metals, but would be a bit softer between HRC53 and HRC59 and would provide better corrosion resistance.
