      well a lot of the flavour comes from the fat, have you tried high quality Wagyu? It's definitely worth the price tag in my opinion, the quality, taste and tenderness is amazing.

      spock - The reason is that bread, butchered and cooked correctly these cuts are about the best you can get.
      The fat contains a lot of the flavour and if cooked and served properly the fat will be soft and delicious along side the meat.
      When the fat is in among the grain of the meat it's called marbling.
      I've been lucky enough to sample it on a couple of occasions, and whilst before hand to my uninitiated eyes i saw it as just a fatty lump of meat, the end result was absolutely fantastic.

        • It's a question I'd have asked once before i knew more about the subject.
          The downvotes are just an unfortunate glimpse into the average Aussie that partakes in this place.
          They rather 'vote' or judge someone than properly participate in anything.
          Just looking at modern TV's bullshit game shows that incite opinion and/or voting by the audience… big brother etc…
          I'd like to think the average Aussie is above this, sadly though i don't think it's the case.

Instead your assertion is immediately prejudiced in the negative, the community calls you out in the form of downvotes and now you have a whinge as if you've been wronged. Get (profanity).

          • @jaejae69: I try not to make the assumption that everyone is an (profanity), and i also try not to assume everyone has an eloquent vocabulary.
            Some people might ask questions in different ways, some ways better or worse than others.
            Whilst i agree it could certainly have been worded much better i'm still not going to make blind assumptions and downvote.

    • not sure why down voted …..some people like the texture and mouth feel of wagyu, the fat in the marbling melts at a low temperature, so not the same as the hard fat on the outside, which doesn’t melt the same as the fat between the muscles (marbling) .

      i personally prefer plain grass fed beef, actually prefer the firmer texture , and find i taste more of the meat juice rather than the fat …… it’s personal preference. i have wagyu a few times a year, but usually hesitate as it costs 3x as much as normal grass fed beef, and normal grass fed seems to go better with my green peppercorn and brandy sauce than wagyu.

  • The fat distribution and pattern is an valuable and benchmarkable attribute of a steak.

    Unless you're a vegetarian, I strongly recommend you try it at least once in your life.

      It's less about the breed, and more about feed/living conditions. Unless you're buying Kobe beef, the wagyu terminology is mostly marketing (not saying most wagyu is bad; they just could've achieved similar results using different cow breeds).

      • Actually thinking that only Kobe beef is wagyu is a misconception by the rest of the world when Kobe was the main Japan port and when westerners first got introduced to this high quality meat. Wagyu, in Japan, is about four Japanese breeds. The Australian wagyu are a hybrid by cross breeding from one of the four Japan breeds.

  • I dont know if they sent me a wrong one (3kg of them!) last time but their rump marble score 9+ is questionable as I had better score 5+ with other supplier.

      so slight discount on these…but i wouldn't say 50% off…that's probably inflating it a bit

  • So the original retail price is $80 for 300g? or $266 per kilo? Not sure why I would buy Australian crossbred wagyu when I can get real Japan wagyu for $160 per kilo at my local asian butcher.
