Actually, from what I have heard, these offers are actually supposed to be aligned to what 'customers would like'. (i.e. If you have a history of transactions at a type of shop, it makes it more likely you get the offer, not less likely).
Being a regular coles shopper would make it more likely to get.
I use credit card for coles ad fuel.
I never shop at coles, bc I’ve got a woolies at my doorstep. Still got the offer and I got $10 off by spending $100

I'm still at a loss as to whether I need to activate for these rewards and if so how. I can't see it via the android app, but perhaps because my wife is listed as primary card holder?
yes you need to activate it. Maybe ur wife needs to do it
It needs to be activated beforehand.
If you can't see it, why would you think it is automatically activated (you do not even know if the account got the offer)?
You need the primary person to see and activate it to be sure you will get it.

I got Caltex per the OP, but Coles spend 200 get $10 cashback
I got $15 cashback on $150 spend at Coles
Spend $200 & get $30 for me. Activated & claimed :)
I never get these offers probably use my card too much
