  I recommend using stainless steel mesh grates (similar to those at korean bbq). Great airflow and can be washed indefinitely!

  As per my experience, these are quite thin. You need a minimum of two pieces or more to avoid oil seeping through. And the edge tends to fold over the food during cooking so you'll get inconsistent crispiness.
