Makes a nice daiquiri. Just ease back a titch on the sugar syrup
Daiquiri, but to really make it sing just throw a little handful of kaffir lime leaves in when you're mixing up your syrup.
I normally leave the syrup on real low heat for an extra 20-30 mins then let it cool in the pan with the leaves before straining.
Definitely one of my favourite daiquiris.
It's nice if you mix with pineape juice and coconut rum!

I've drunk spirits my whole life and I love pineapple but pineapple rum is just terrible.
You tried this one? I've seen some people try it and be disappointed because they're expecting a strongly flavoured 'rum'; this isn't that. The pineapple is present but definitely not overpowering, and I don't think the spirit is noticably sweeter than other similar rums without the pineapple.

Yeah mostly, but there's very few spirits I drink neat these days. This stuff I generally just use in daquiri or mojito riffs, unless I find something else interesting that calls for it.
Wouldn't usually bother with this with a bigger mixer, like say ginger beer in a dark and stormy, cause I think the pineapple just gets a bit lost.

If you missed out don't worry too much - it's not as good as it sounds (at least in my opinion). I tried it expecting it to be nice but was very disappointed. Of course it's all subjective!
