I'm looking into purchasing JR pass (7 Days)
If I start the ticket on 12/1/2023, would the ticket still be valid on the 19/1/2023 or does it expire on 18/1/2023 11:59PM something like this? Thanks

It’s 7 calendar days, not 168 continuous hours, so will expire midnight.
So it'd expire on 18/1/2023 11:59PM?
Day you activate is the day 1, till last train on that day. Usually around 11pm.
Its wise to pre book all your journeys on the day you activate your ticket as some trains seats can get booked out.
So at the ticket counter you can work out when to activate your ticket.
Pro trip : Once you in the train, you can upgrade to higher class, based on the availability. Just talk to a nice ticket checker ladies.

You can work out your itinerary and book all your trips and seating when you pick up JR pass at airport. Staff very helpful. I got mine on 7th Oct. You can use JR pass on any JR line. You can get express train from airport to Tokyo and then take JR line to your accomodation.
You can also change departure time if you change your mind. Nikko was fantasic as was lake and cable car to see Fuji. Had fabulous sunny Autumn weather. Enjoy.
Expires midnight so you would want to activate on the day (ideally morning or arvo instead of the evening).
