got Accor plus / everything you get through airline or cc or what ever. Accor can be reasonable but you really need to read the fine print - I have a free night and every hotel I have tried to book ( globally ) comes up with not available at this place. Know that the dining discount is only available in the Asia pacific region ( painful discussion with help - why limit it to a geographic location when one of the largest chains in the world, etc etc ) ie if eating in Jeddah ( for example ) you would think you were going to get the dining discount - no - even though the hotel website looks like you do
anyway an average loyalty program at best - value if you like eating that their hotel in Asia pacific ( eg note Soffitel Melbourne "no dining discount today because its the 27th December and its a boxing day holiday and yes you can have breakfast with us for $75 pp)

If you think you will love Accor ( and be able to understand all of their weird memberships and geo rules and black out periods) go for it - there is occasional value for sure, but generally just another big hotel group - do a search of Accor Hotels in Paris - I dare you, see how many offer a free night, see how many offer value; I remember some ibis hotels are equal to sleeping on the street ( eg tried to claim stay points retrospectively due to computer malfunction at check in - "no too small an Ibis to give points WTF?)
Finally, if you really want the inside running - buy 50 Accor shares and email them for a Gold membership - *you do the research - it snot on the airline blogs 9 and i would prefer it that way IYGMM

When booking the free night, if I select 2 consecutive dates (I have 2 free stays), it shows 'StayPlus' but it costs money.
If I check each night separately, the 'StayPlus' is free?

If by Sydney Harbour you mean Darling Harbour and the Sofitel there, then no; it's not available on that night.
Sofitel Sydney Wentworth and Pullman Hyde Park are though, but not sure you'd want to burn your free night at those hotels or will be saving all that much by taking out this subscription to only claim the free night at those hotels.
