      Because I have a Wusthof Ikon Classic 23cm chef's knife I never use, but have Vintorinox santoku, 20cm cook's knife and several boning and butcher knives I actually use. I just like Victorinox more. All my steels are Wucthof though

      Edit:also cheaper
