I just bought a new apple watch. SE is the best bang for the buck, no question.
Not really necessary to look at them in person since the SE & the Series 8 look practically the same. Series 8 is a little heavier and has a marginally larger screen. Series 8 screen is brighter, not really noticeable indoors.
Series 8 has stronger crystal and better dust protection, so it's more durable, but for most people the battery will fail before the watch does.
Series 8 has some advanced features missing on the SE. Most are not that important but some that might be:
- Series 8 can do menstrual cycle tracking, SE can't, because only the 8 has a skin-temperature sensor.
- Series 8 can use an on-screen little keyboard for entering text messages, SE can't do this.
- Series 8 has fast charging. Most people won't need to charge during the day but if she's wearing it at night as a sleep tracker she's going to need to charge every day, fast charging is good for this.
- Series 8 has an always-on display, SE you have to lift up your wrist to activate the displayBut yeah also is your wife an ozbargainer? If so she will love the SE, otherwise get her the good one. You can also spend more on a nicer band.

If you can find one on sale from the big retailers, JB, HN, TGG, DJ etc then call Apple and they will price match over the phone, then you can use the gift card to pay. There are no sales at the moment AFAIK though
Edit: also yes Apple Refurbished is always the best choice if they have anything, but they don't have any watches at the moment

Bought AW a couple of months ago went for Series 7. Not enough difference to S8 to justify the extra $$$. Always on and larger screen is why I chose S7 over SE.
My suggestion is take her in to see the range and work out what she wants.
