It’s inbuilt functionality in iPhone to be able to remove or edit edit metadata
‘Tis not… you still can’t delete anything other than the location and time. And date and location can only be changed not deleted. Lens data, phone model iso and a whole bunch of things can not be changed.
You are right except for one thing. Location can be deleted.
