          get an airtight jar, and then tie it inside a plastic bag that can also be a bit more airtight. This prevents moisture from getting into the jar when it unfreezes.

          The process of freezing beans is fine - it's the thawing that kills it, as the moisture condenses onto the bean as it thaws.

          You should freeze and thaw once. Don't keep it in the freezer, take it out to scoop a bit of beans every day and put it back in.

        • Vac seal them? I divide them into ~250gm bags, seal them and freeze them, the hopper on my machine takes about that so when it's about to run out I just empty a bag straight into it.

          • @dav3: vac seal is the best, but not worth it for non-fancy beans.

            I would imagine the plastic waste is not great for the environment tbh - a tight fitting jar (funny enough, i use those jars you can buy instant coffee in…) is good enough imho. I don't even freeze it - just put it in a cool dry place and out of the sun.

          Just get a ziplock bag and a straw to draw out as much air as you can then freeze it.

            @customundo: I'm seeing drastically different reports, including on the AU Sculptor FB group - some people pulling great shots with zero seasoning, and others can't seem to pull a shot to save their life without seasoning. I reckon I'll at the very least TRY to pull a decent shot without seasoning before running 5-7kg through the grinder. I'd be very, very reluctant to blow 5-7kg of beans just on seasoning a grinder unless I absolutely have to - and if I do, it'll be the very cheapest beans I can find, probably something rom the supermarket.

              Based on the first shot from a 22g dose, I'm quietly confident to conclude that mine must've been one of the lucky ones because that was the best tasting coffee I've ever produced at home!

        • For anyone keen on trying the Pegasus beans, with some experimentation they do very well in an Aeropress, here's my formula for full flavour and low bitterness. This is using the traditional method, not inverted:

          1. Grind one level Aeropress scoop to fine espresso grind (in my manual Porlex that's 1/2 turn off fully closed)
          2. Pre-wet paper filter, dump grinds in, level and pour water just off the boil to level 1.5 (my kettle gives me water at about 85C)
          3. Stir for 10 seconds, should see a healthy thick bloom
          4. Sit to infuse for 30-60 secs
          5. Push through
          6. Top up with hot water, dash of milk

          I've found myself saying "goddamn this is good coffee" using the above. Super enjoyable for an easy java.

    • Hey alvchan - Our medium roast Enterprise Blend will be a great balanced brew with your v60.
      If you prefer a lighter roast I would go for the Pegasus or Sumatra.

          • @AIRJO CoffeeRoasters: Been drinking it for a few days now Dan - think I've largely got the grind dialled in now. So far I'm finding it very smooth, good balance and it's got a strong body to it. Seems to be a more consistent finish than what I was getting with the Marco… I dare say that's due to the change of grind and machine settings rather than the bean to be fair, but happy so far.

    • Hey there itslittfam - if you order now it will be shipped tomorrow morning for sure. As for delivery I just can't be sure on that one. Obviously its the fastest option being express but I'm not 100% on the Saturday morning limitations. Sorry I can't be as specific as you need.

    Hi OP, I am currently trying out different beans and would like to try yours. I currently have a Barista Pro for a milk based coffee - could you recommend which blend you would prefer and any grind settings etc?

    • Hey there verdikt - thanks for giving us a go. Definitely go for the Enterprise Blend to start with.
      As for grinder settings, the best method here is to dial in your specific beans to your machine.

  • Hi Dan have just ordered Sumatra. We like our coffee strong and on the sweeter side with milk.

    Question: many peeps talk about freezing their beans, but I read an article recently written by a professional barista who said beans should only be stored in airtight container in a cool, dark environment - and not to freeze (and he listed the reasons why…) Any thoughts?

    • Hey there Robert4 - thanks so much for your order - we genuinely appreciate it.
      My thought on freezing beans are simply "I'm not sure" - there seem to be as many articles for as there are against.
      I would always recommend small batches of fresh when you order - you just can't beat fresh.
      Storing fresh beans in a dark, airtight, cool environment for a few weeks I believe is the best you can do.

      Just my 2c and hopefully helpful.

Even as my wife & I reduce our caffeine intake we still get a 500g bag of decaf delivered every 8 days - your subscription flexiblity is awesome. I get a kg of Sumatra for blowins everytime this deal is on. My dad gets 500g of Sumatra every 3 weeks.
