I usually just pick up a 28 day Amaysim or Lebara sim from 7/11 (there's usually a deal on their app for like $11 or so…. if not then Coles/Woolworths usually have it for around that price… check their catalogue). Amaysim is easier to port in compared to Lebara in my opinion.
After that you can probably port right back into Moose Mobile's curent cheaper 6 month sign up bonus deal. Also, there's nothing stopping you from just porting into a 7 day plan either…. it will just be more expensive but lesser chance of missing the current Mooses Mobile promotion

Stupid question but I’m assuming when you port back over to moose mobile they will need to mail you a new SIM card and you won’t be able to reuse your current one?
That's correct, it will be an new sim card sent out to you. Idk about Moose Mobile but some carriers/providers such as Amaysim allow for esim, so you don't actually need to wait for a physical sim to arrive.
