I use a pump to suck the air out then chuck them straight in. Usually by the time I receive them it's been 4-7 days post roast.

Don't know the science to it but I usually freeze soon as I receive and thaw for a day before going into cannister.

Yes I usually when times are good have 2KG frozen and 1Kg in an airscape cannister does the trick for me. Have no issues with freezing.
