Used uber black today from the airport. Great experience. Had a call from the driver about 20 seconds after I booked a car just confirming where I was standing so he wouldn't drive past me. Car arrived in 2 minutes. New Holden caprice. Driver loaded mine and my wife's bags into the boot for us and then proceeded to open the door for my wife. Took a quick route home and then opened the door again for my wife and uploaded our bags. Maybe was about 5 - 10 dollars dearer than a taxi but after using it today will definitely pay that every time.

Used uber both ways for a recent interstate trip.
Managed to find a driver at 5am for the outbound in SE Melbourne suburbs! Fare was $62 (after discount), which is about $30-40 cheaper than a taxi. Driver even offered to apply the code for me.
There were about 4 uber cars at the airport, my driver didn't know about the promo. Managed to take a route which saved $2 further at about 8pm.
Drivers are very friendly and love talking about the industry (hire cars, taxis), tech and sport.
Which is a refreshing change from cabbies whispering into their mobile headsets for the entire trip.
Uber have fixed rates to airport ($95) from SE suburbs, for when there are no good promos on. Which is at most $6 more than a taxi and possibly better value if you get a bad cabbie.
My limited experience so far:
2 months ago tried to book a car from Ivanhoe for about 20 minutes there were no available drivers. Finally got lucky - one was close enough, 2 minutes later my booking was canceled by the driver. Got a taxi.
3 weeks later at Melbourne Airport got a car in 5 minutes, no probs.
I think if you are less than 10 km from the CBD or the airport will be relatively easy to get one, otherwise not so.
