          Not really, still only $57, next best price I found from a quick look was about $118 @ House

          There is a 22cm for about half that ($60ish+ ), however this is the 24cm

        The edges of the blade can bend to one side (on a micro scale). Honing realigns the edge back to centre.

        Sharpening removes metal. Honing only bends the metal back, or remove microscope bur/imperfections.

      • Straightens the edge (if it's been folded) on a knife.
        Sharpener takes off metal.
        Sharpening tools include water or oil whetstones, or those handheld pull-through style ones (these give you a very rough edge)

        Not sure why Global has this honestly, Japanese knives have harder steel than German knives (softer steel)
        Harder knives = brittle, more prone to chipping. Usually is a thinner knife with a sharper angle too.
        Softer knives = softer, will usually fold with use

        Usually you hone in between meals, and sharpen much less often.

          Global knives have a HRC in the mid 50s. It's very soft. Also, global uses stainless steel, not carbon steel.

          Traditional carbon steel knives are upwards of HRC60.

          European stainless steel knives are also hardened to HRC mid 50s.

      Ceramic & Diamond Rodsrod
      Stone sharpening is the best way to sharpen any knives, not just GLOBAL knives. In between stone sharpening’s you can use GLOBALS ceramic or diamond rods. These sharpeners are used in the same way that traditional steels are used to sharpen other knives and, as they are made from the two hardest materials known to man, are suitable for sharpening all good quality knives.

      The diamond rod is harder than the ceramic rod and will bring back an edge quicker. The diamond rod also will not break if it is hit or dropped like the ceramic rod. However, the ceramic rod will give a finer edge if used regularly and replacements may be purchased if you break your ceramic rod.

      NOTE Do not use traditional steels made from other materials as they are likely to damage Global knives.

      Also shorter, that's about 21-22cm long. Global also offer a shorter model for a cheaper price (though equivalent to this, given the markdown)

    I have the Ikea one and it works quite well as a touch up tool every couple of weeks. It does NOT sharpen a blunt knife though.

    IMO the best way to get a repeatable seriously sharp edge on a knife (without well-practised skills with a stone) is using one of these;

    There are various different flavours of the same thing, but it works an absolute treat. I use better quality stones, but the actual device works really well and will get you a shaving sharp edge. Then you use the ceramic rod every couple of weeks to maintain the edge. There is a lengthy thread on Whirlpool forums about knife sharpening using these tools for those REALLY interested (it will take a LONG time to read through).

  • I have used the ikea ceramic for years, works well, way less expensive. I am not sure why this is so much more expensive.

    When I saw the title I thought this was going to be a sharpening tool for ceramic knives, not a ceramic sharpening tool for metal knives.
