$10 a kilo is a lot of money for fragments of vegetable, oil, vinegar and spice.

      It depends.
Im going to try the caramelised onions.
To make 'proper' caramelised onion, u need to cook the onions for approx 2 hours.
1kg of onions would whittle down to approximately 300g of caramelised onions.
In addition, you have to consider the cost of gas, the clean up and the most important commodity: your time.
Yes there's a cheats way of adding bicarb, but it does affect the flavour.

Bulk vegetables probably cost 50c/kilo, but you're right. It's not so straightforward.

  • I forgot to clarify the time component.
In the first hour you let the onions sweat out all the water (moisture) content.
After that you have to stir infrequently to begin with, but then continuosly as the onion start to carmelise otherwise it'll burn.
Is it worth it? Yes, the flavour is worth the time spent. Hard to describe but the onions becomes sweet, and you know exactly what is in it.
Hopefully this relish would be similar tasting. Bonus points for being half price too
    :)
