I'm thinking to get Xiaomi Mi Max 2 for the missus. Do these phones come as English with their default language or we have to change it? Also would it be having Google play installed as a default app?
Any best deals out there? What price should I be looking at for the Black ome?

I bought the same one. Received last week.
It doesn't have Australia in the Region list so I selected Singapore instead.
I've been trying to add English (Australia) to Languages but failed miserably. Tried MoreLocale 2 using this method https://ausdroid.net/howto/make-your-nexus-5-speak-australia… but can't get the grant permission to work. It's not a big deal but Google Assistant will only speak in english US/UK and doesn't seem to work properly.
Have the original mi max with the global rom has everything that a android phone would have apart from nfc.
When i bought it didn't really study the size when it came was huge but slowly grew into it all in all a great phone. :)
Got both the 1 and 2. The 1 was a global ROM version from gearbest - flawless (until I cracked the screen). I got the 2 in China, which came with the Chinese ROM. If you do get Chinese ROM, simply changing the language to English won't be enough - you'll need to install the global ROM - it's easy but takes 3 days minimum (requires you to wait).
It's an excellent phone - just keep in mind it doesn't have NFC - so no Android pay.
Also, if you crack the screen (as I did with the Max 1) it's very difficult to find a place in Australia that repairs Xiaomi (those fix it places won't touch it)
Best price I have seen was https://www.ozbargain.com.au/node/345573 at $250 AUD roughly but $292 AUD is also a really good price imho.
Golden seems to be cheaper than black for what it's worth.
Just make sure she doesn't mind handling a 6.4" one. Black is nice… once she goes black, …..
The global one I bought from Gearbest came with English and the Play Store installed.
It was on sale for $286ish at the time. $292 isn't a bad price.
