Bought a KG of Sumatra off Two Cracks a week ago in a similar OzBargain deal. Coffee is fantastic!

    Recommend these guys.

    • Thanks for the feedback :)

  • How’s this go with a Moccamaster (filter) machine?

  • Can I freeze the bags that I don't use or what would be the best way to store them?

    • I've never tried freezing coffee. It keeps well for up to a month in the resealable bags and kept in the pantry or cupboard.

If you do freeze them try and vaccum pack them first.

  • Anyone received tracking information?

  • Hey twocrackscoffee!

Got the coffee today, can definitely taste the caramel taste!

One quick question from a coffee noob, I noticed that when I tap out the puck after it's used it's still quite powdery and doesn't come out as one solid puck like my normal coffee but rather comes out as a powder. I think in some areas in the puck it's still a little bit dry - does that mean I have to grind it a bit courser?

The shot only starts pouring after about 10 seconds too.

    • Hi there.. Glad your coffee arrived.
A rough guide is to achieve an extraction of about 50-60ml in 20-25 seconds.( double basket, 18-22 grams of coffee)
The shot should start being extracted about 2-3 seconds after machine and pump starts.

      Lots of variables!
What grinder do you have? This is the most important piece of equipment IMO.

      Cheers

      TCC

      • I got it pouring nicely now, just had to make the grind a bit coarser. I have a breville oracle!

The puck is still a bit messy though when I hit it out, still not a big sold piece but kind of like soggy powder.

  • Received mine the other day - gotta say Im not impressed with it. Mild flavour, not much lingering after taste or smell. The bean themselves look very different to any bean I have had in the past - kind of small, dry and a powdery residue. Not sure if this is just me, or others feel the same but I wont be trying this again sorry. Tick for the speedy delivery and 250g bags.

    • At least you have already received your order. God knows where mine is.

    • Hi there. That's a shame. It can be a polarising coffee but the flavour is there if you can extract it.
How are you brewing and what gear do you have?
I would leave them to rest and develop a bit longer also. 5-10 days after roasting ideally.
      Cheers

      TCC

  • Hey TCC! when will you ship the order? xmas is around the corner.

    • PM'd you

  • Hey 2CC,

I just tried to make an espresso (I've never drunk espresso before) and noticed that my shot's quite sour. Does that mean I have to grind it a bit finer? The volume seems correct for a 20 second extraction.

    • Hi again. It's really hard to say with so many variables at play with coffee.
First of all I would say the beans need a bit longer to rest after roasting.
      5-10 days ideally.
If your extraction tastes like that then it might be a grind issue, tamp issue, or machine needs a clean.
      What gear do you use?

      Cheers

      TCC

      • Hey 2CC,

        Thanks for the quick delivery

When im making the coffee all im really tasting is the jasmine floral notes , im not getting any of the other flavours - much like maybeamacy

Maybe my palate is just too used to using supermarket beans !

I know there are alot of variables at play but at home i have the EM7000 & breville BCG820BSS grinder, i have played around a bit with the settings but not getting much joy

        • Hi there.. Glad you got the beans.
The flavour will change over the next few days. That's why I always recommend 5-10 days degas and develop time after roasting before brewing.
Try and aim for a 40-50ml extraction in 20-25 seconds using 18-22g of coffee (double basket).
You shouldn't have to tamp too hard to get this recipe. If you do grind a bit finer and use less tamp pressure.
          Cheers

  • Nice (unique) flavour, but my machine chokes with my normal grind. Making the grind coarser lets the coffee out faster but very limited crema. Are there a few accepted norms in brewing with this type of coffee? I have tried most permutations. Next attempt will be finer but less dose ….

    • Gaggia MD64 grinder and La Pavoni machine. Couldn't get the best out of these beans. Got them to an almost acceptable level, but still not optimal. No matter what permutation, the used coffee always has patches that look "dry" or barely affected by the hot water passing through it. Makes me wonder if the beans were roasted optimally. Anyway, good enough to use up I suppose, but won't be buying again.

      • I thought the puck I had was dry too and that the water hadn't seeped through it! It comes out in little crumbled pieces rather than a solid puck, right?

It still tastes okay to me but I'm happy with McDonalds coffee too.

        • Yep. Very dry. Not the first time I have endured a dry puck in my life though.

        • @Risto: hi there.. It's a challenging bean to grind and brew I'll agree. If you have a pre infusion setting on your machine this will alleviate the dryness.
They are small dense beans with lower moisture levels compared to others.
I'd say try something more mainstream next or stick to the south/central American and PNG/Indo beans.
Sorry to hear you couldn't extract the best out of the Yirga!

        • +1

@Twocrackscoffee: Thanks for that. Best I could achieve was keeping it fine but reducing the dose. The taste is quite addictive so all isn't lost. Please keep me on your mailing list for anything else interesting. Cheers

        • @Risto: will do. Cheers
