Processing – Fully Washed
Altitude – 1500-2000 masl
Cupping Score – 81.5
Varietal – Aruca – Blue Mountain – Typica – Bourbon
Optimal Roast – Suits a Medium – Dark Roast

Suitable for – All brews including milk based coffees

Flavour Notes – Juicy clean body with blackcurrant, cinnamon and passionfruit flavour. Smooth orange and chocolate finish

COLOMBIA - TOLIMA - ORGANIC

Region – Tolima
Processing – Washed
Altitude – 1600-1950 masl
Cupping Score – 85
Optimal Roast – Suits a medium roast.
Varietal – Typica, Caturra, Colombia & Castio

Suitable for – All brews including milk based coffees

Flavour Notes -Liquorice, cherry, spicy, sweet honey – lovely cup

COLOMBIA - SIERRA NEVADA - ORGANIC - DECAF

Region – Sierra Nevada de Santa Marta
Processing – Washed, then Mountain Water Decaffeination
Altitude – 1000-1600 masl
Cupping Score – 82
Optimal Roast – Suits a medium-dark roast.
Varietal – Typica, Castilla

Suitable for – All brews including milk based coffees

      Not at the moment - I used to sell Aeropress and V60 kits + a few other bits and pieces but just focussing on the coffee now.

      • Appreciate the reply. My father in law loves coffee but always drinks instant due to its ease. I would like him to drink proper coffee.

        COLOMBIA - TOLIMA - ORGANIC sounds like it would be perfect for him. What's the cheapest way to get him to make a decent cup of coffee using the COLOMBIA - TOLIMA - ORGANIC beans? Do they come ground?

        • No worries - maybe you can buy him a grinder. aeropress and some beans to get him started. Grinding on demand with fresh beans is the best way to go for sure.

          Aeropress is a great starter. Cheap ( $40 or so ) and makes a clean cup of coffee. Can get the Able stainless steel filter($20) instead of the paper ones that come with it.

          Entry level burr grinders - Sunbeam EM0480 or Breville Smart Grinder Pro ( seen on here a few days ago for $150ish I think) They go alright for the $$.

    What do you mean by "degas 5-10 days from roast date ideally"? I've recently bought a coffee machine and am a newbie to the coffee making industry, but I presume you mean that 5-10 days is the ideal timeframe to consume the coffee beans for best taste? If so, I've read that up to 14 days is ideal? Should I be aiming for 5-10 or 5-14 days?

    If I'm wrong (which I presume I am because you wrote degas) then could you explain what you mean?

    Sorry for the question, I'm new to it all and it can be a bit of a minefield. Good news is I got the breville grinder and dual boiler pack, so I'm currently experimenting - but I can't experiment too much as too much coffee for me no es bueno, so I'm actually looking into purchasing your decaf beans, as I could use those over and over again in a few sessions and compare flavours with different settings etc.

    • The beans release CO2 after roasting so just let them sit in the bag for a few days before use. They are generally good for a few weeks after which their flavour profile takes a dive.

      Yep as m9 said - there is a lot going on in the bag after roasting . The bags have one way valves to allow CO2 to escape over a few days . The flavours develop , mature and deepen during this time also.
      Every bean is different - the Ethiopian coffee, for example, are smaller more dense beans and degas quicker in my experience.
      The PNG beans are larger and hold more gas so take a bit longer to 'peak'.
