Bit of competition across the Tasman at present, with Air NZ and Jetstar (and Qantas albeit more expensive). I've put together a bunch of example return dates over the next couple of months. Note that there are a couple of sales on ending this week, if the news is to be believed. Have checked a bunch of routes, but most major cities have flights (with connections sometimes) to Auckland, Wellington, Christchurch and Queenstown international airports.

What does the cancellation policy look like in case they flights get suspended?

depends on airline, I've linked to their policies in the post.

Mainly comes down to how you book.

If you book direct with Air New Zealand they'll let you cancel and hold a credit no reason asked up until the end of the year. Likewise, if they cancel the flights you'll get a credit.

On Qantas if booked direct (up until the end of the year) you can cancel and get a credit with no reason asked however when using this credit it must be used on flights worth the same value or more otherwise you lose the rest. If Qantas cancels the flight you can get a full refund however the processing time for this can be 6-12 months.

Jetstar will give you a credit if the flight is canceled or if you call them and tell them you can't travel due to border closures.

Many of the links above are prices with online travel agents who make up their own rules. Most will charge a large fee to put a flight into a credit (something that can be done for free if booked direct). In fact whilst all Australian/New Zealand airlines are offering free changes (just pay the fare difference), basically all of the online travel agents charge an "admin fee" to make changes unless you pay more for their support packages.
